Yum Alert! #1 - Fresh Berries Macerated In Lemon Juice And Honey Republic Organic Strawberry Honey
When used in terms of food, maceration means to soak a food (usually fruit) in liquid in order to infuse it with the flavor of the liquid. Any type of berry can be used, but in our example we are using fresh strawberries and blueberries. The combination of the lemon juice and the strawberry honey creates an incredible flavor; somewhat like chambord with lemon or limoncello with strawberry - depending on your point of view.
Fresh Berries Macerated In Lemon Juice And Strawberry Honey
Ingredients
1 1/2 Cups fresh strawberries rinsed and halved
1/2 Cup fresh blueberries rinsed
1 to 1 1/2 tablespoons fresh squeezed lemon juice
2 Tablespoons Honey Republic Organic Strawberry Honey
In a small glass bowl combine the lemon juice and the strawberry honey. Mix with a spoon until the honey is dissolved. The end product should be slightly syrupy. Put the berries in a glass bowl and pour the honey/lemon liquid over them. Gently toss the berries with a rubber spatula or large spoon until they are well coated. Cover the bowl with plastic wrap and put in the refrigerator for approximately 2 hours. That's all there is to it! The berries can be eaten right out of the bowl, put on cheesecake or ice cream. They can also help perk up your breakfast by serving them over waffles or pancakes.
