Yum Alert #3 Candied Bacon
This is so good it's scary! We know, it doesn't sound too healthy but, if you use uncured bacon (nitrate and nitrite free), organic brown sugar, organic rice vinegar and Honey Republic Organic Honey then you just might be able to convince yourself it is good for you! Either way, this is an absolutely delicious treat. Sometimes you just have to indulge yourself.
Ingredients
1 LB Thick sliced bacon
1/2 Cup Organic brown sugar
2 Tbs Organic rice vinegar
2 Tbs Honey Republic Organic Wildflower honey
Directions
Preheat oven to 350. Line a rimmed baking sheet with aluminum foil and place a metal cooling rack on it. Arrange the bacon in a single layer on the rack and cook in the oven for 10 minutes. Meanwhile, in a bowl mix the brown sugar, honey and vinegar and set aside. After the bacon has cooked for 10 minutes, turn the slices over and bake for another 10 minutes. Remove from oven. (At this point I like to use a paper towel to blot up all the excess grease on both sides of the bacon). Using a silicone brush, apply a thin coat of the sugar honey mixture to one side of the bacon and put back in the oven for 5 minutes. After 5 minutes, turn the bacon and apply a thin coat of the mixture to the other side and cook for 5 minutes. Repeat this process every 5 minutes until the bacon has a nice caramel color. (You will end up putting about 3 to 4 coats of honey/sugar mixture on each side.) This may seem a little tedious, but the end result is totally worth it! Place finished bacon slices on a piece of parchment or waxed paper to cool. To serve the candied bacon can be cut into bite size pieces and placed in a small bowl or plate, or they can be cut in half and arranged in a short glass as pictured. YUM!
